Tater Tots are great for nachos, and they’re great for breakfast. So what’s better than putting them together as Breakfast Totchos?
It was a great day when I discovered that you could make nachos with Tater Tots (Totchos). Swapping the chips for crispy potato puffs immediately takes them to the next level. But it took me a few years before I took the logical next step: making a breakfast version. If you can make it breakfast burritos and breakfast taquitos, why not have Totchos for breakfast?
Once I had the idea, making the recipe was easy. I simply spread the Tater Tots out on a baking sheet and topped them with all my favorite breakfast foods: eggs, sausage, bacon, and some Colby Jack cheese. Five minutes under the grill and I had a complete Mexican breakfast on a plate.
Cooking the Tater Tots: For extra crispy tots, fry your tater tots according to package directions. Use an air fryer at 390°F for 15 minutes to ensure they turn golden brown and crispy.
Layering: Spread the tater tots in an even layer on a large baking sheet. This prevents them from becoming a big pile, so they cook evenly and become crispy on top.
Flavor boost: Cooking your sausage first and using the leftover fat to cook your scrambled eggs will give you exceptional flavor and prevent the eggs from sticking to the pan.
Cheese options: Experiment with different cheeses such as pepper jack, Monterey Jack, sharp cheddar, white cheddar or mozzarella for varied flavors.
Roasting: Keep a close eye on the totchos as they roast on high. You want the cheese to melt completely without burning, so wait until it is perfectly melted.
To adjust: This recipe is flexible. Adjust quantities based on the number of people you are serving. You can easily make a single serving or double it for a crowd.
Breakfast Totchos
- Make sure your tots, scrambled eggs, and breakfast sausage are all ready to go. Set your grill to the highest setting.
- Spread the potato cakes out in a single layer on a large baking sheet. They can overlap a little, but make sure they’re not just in one big pile.
- Divide the scrambled eggs over the potatoes and then sprinkle the sausage, cheese and bacon over them.
- Place the baking sheet in the oven and roast your totchos on high for about 5 minutes, or until the cheese is completely melted.
- Serve and enjoy!
