Instead of regular mayonnaise, you can also use Greek yogurt or light mayonnaise to lighten the sauce.
Absolutely! Feel free to add toppings like sautéed mushrooms, spinach, tomatoes or different cheeses.
Toast the bagel well and make sure the steak and eggs are not too greasy. A thin layer of sauce on both sides of the bagel can also provide a barrier.
- Use thinly sliced ribeye or a well-marbled steak for the best flavor and tenderness. If you can’t find thin slices, you can lightly freeze the steak and slice it thinly yourself.
- Don’t skimp on the seasoning for your steak. Make sure you season both sides generously for the best flavor.
- You can prepare the sauce and even the steak the night before, saving you time in the morning.

- In a small bowl, combine mayonnaise, Dijon mustard, dill, lemon juice, and steak sauce. Place bowl in refrigerator to chill until ready to use.
- Sprinkle the steak slices with Worcestershire sauce, steak seasoning and garlic powder.
- Heat a skillet or griddle over medium heat. Sauté the diced onions in olive oil over medium heat until soft, about 5 minutes. Remove the cooked onions from the skillet and set aside.
- Cook the steak slices over medium heat for about 2-3 minutes on each side until cooked to your liking. Set aside.
- Cut the bagels in half and toast them lightly.
- Melt the butter in the same pan you used for the steak (add a little more butter or olive oil if needed) over medium heat. Cook the eggs to your liking, I beat them beforehand and cooked them until they had a scrambled egg-like texture.
- Spread a generous amount of sauce on both halves of each toasted bagel.
- Place the boiled egg on the bottom of the bagel, top with steak, fried onions and a slice of cheese. Cover with the other half of the bagel and serve.
