Frozen desserts are a family favorite, and we all love a good frozen pie. Not only are they refreshing on a hot summer day, but they’re so easy to make ahead of summer parties or to have on hand when the craving for a sweet treat strikes. This frozen strawberry pie recipe is a classic strawberry dessert that’s perfect for any celebration or event, including patriotic holidays like Memorial Day, 4th of July, and Labor Day!
Frozen Strawberry Pie Recipe Ingredients
To make this frozen strawberry pie you will need the following ingredients
- graham cracker crust*
- cream cheese
- instant cheesecake pudding or vanilla pudding
- milk
- fresh strawberries
- COOL WHIP whipped cream topping
- strawberry ice cream topping
I made this recipe with a 9 inch crust. You can also increase the size if you want a slightly larger pie, but the pie will be thinner.
This recipe was tested with the full fat versions of cream cheese and whipping cream. You can substitute the light versions if you prefer, but be aware that this may change the texture, flavor, and stability. I think it would still be delicious.
You can a homemade graham cracker crustbut I opted to keep it simple with a ready-made graham cracker base, like I did with this recipe for peanut butter pie. (That cake is rich, sinful and irresistible. So good!!) This makes it easy to store in the freezer with a plastic lid and also easy to take with you with a disposable cake tin.
This recipe uses strawberry ice cream or strawberry dessert sauce from a jar instead of strawberry jam or strawberry puree.
How to make frozen strawberry pie
The steps to making a frozen strawberry pie with Cool Whip are pretty simple. You start by whipping your softened cream cheese until it is smooth. Make sure your cream cheese is at room temperature, otherwise you will get little lumps.
Gradually beat in the milk and then add the cheesecake or vanilla instant pudding mix. Beat for two minutes.
Add the chopped fresh strawberries, strawberry sauce and whipped cream and stir until well combined.
Pour this pie filling into your graham cracker crust. If you are using a 9 inch pie crust, this will fill it all the way to the top. Cover and freeze. (I used the clear plastic cover that comes with the store bought crust, but plastic wrap will work too.)
You want to freeze it until firm, ideally overnight or at least 8 hours. Remove this icebox cake from the freezer and let it sit at room temperature for at least 15 minutes before serving. The exact time will vary. If you want a softer cake, you can leave it in longer.
If desired, garnish the strawberry tart with extra fresh strawberries.
I like to add whipped cream along with halved strawberries or sliced strawberries to each slice, but you can also use homemade whipped cream or extra whipped cream. (You’ll get extra if you use an 8 oz. jar of COOL WHIP, as the 1 oz. you need for this recipe is only half a jar.)
The longer you leave your cake at room temperature, the fluffier it will become. So if you find this cake too firm, leave it to rest for a while. It is so delicious!!

In a large bowl, beat the softened cream cheese until smooth. Gradually beat in the milk. Add the instant pudding mix. Beat for 2 minutes.
Fold in strawberries, strawberry ice cream topping and Cool Whip. Pour into graham cracker base and spread evenly.
Cover and let it set in the freezer. (Preferably overnight or at least 8 hours.)
Before serving, remove from freezer and let sit at room temperature for at least 15 minutes to soften. Garnish with fresh strawberries and whipped cream or extra COOL WHIP, if desired, before serving.
Store leftovers covered in the freezer for up to three months.
Toppings are optional.
Can be substituted with a 10″ thick graham cracker base.
